SFOGLINI RAISES $2.5MM IN SERIES A FUNDING LED BY ALMANAC INSIGHTS
After opening a state-of-the-art mega production facility, financial backing helps artisanal pasta maker meet growing demand.

NEW YORK, NY (June 15, 2018) – Rapidly expanding chef-created, artisanal pasta maker Sfoglini announced it has completed a $2.5MM Series A round of financing led by Almanac Insights – the investment fund created by David Barber to back companies that develop sustainable products and services improving the food system.  Sfoglini (pronounced “sfo-lee-nee”) is one of the only boxed pasta makers to pair superb ingredient quality with authentic Italian tradition and ingenuity; the brand is devoted to making its pasta exclusively with 100% organic American grains combined with local ingredients.

With their recent move to a state-of-the-art mega pasta production facility in upstate New York, Sfoglini is now capable of creating and selling both long and fresh pasta, in addition to their current roster of unique and traditional shapes and flavors. The funding also means better pasta on more shelves across the country.

“This partnership comes at just the right time for us, and Almanac Insights is just the alchemy we need to transition from a small startup in Brooklyn to a mass-production pasta maker at our new state-of-the-art, large-scale facility,” said Sfoglini co-founder Scott Ketchum.

Prior to the move upstate and fundraising, Sfoglini had $1MM in sales but is projected to grow to $10MM in the next few years. Sales are expected to more than double in the first year of production at Sfoglini’s new Coxsackie plant, which is 10 times the size of the pasta maker’s original shop.
